It’s always the best when a dish looks and tastes elevated, but only takes minutes to prepare. That’s the case with my Hot Artichoke Dip, Goat Cheese Appetizer with Puff Pastry and Brie Puff Pastry Bites, and it’s the case with this delicious bruschetta dip as well.

My Party Trick: I’ve seen different versions of this recipe. In some, the tomatoes are kept raw, in others the cheese is warmed up and mixed in with the tomatoes. In my version the tomatoes are roasted, which gives them a deep, rich flavor and then placed on top of the cheese to warm it gently, giving it the best texture for scooping and dipping!

- Cherry tomatoes: Slice in half before baking to make scooping easier. They also release a lot of yummy juices when they are cut in half! You can use grape tomatoes if that’s all you have, but I prefer the sweetness of cherry tomatoes.
- Flakey sea salt: In my opinion some flakey sea salt is necessary for this recipe to really take it over the top!
- Garlic: The more garlic, the better! Fresh garlic will always have a punchier flavor. Try to stay away from jarred if you really want to elevate your dish.
- Boursin cheese: I use two packages. I love the Garlic and Fine Herbs or Shallot and Chive flavors. If you’re not a fan of boursin you can whip together a little feta with cream cheese.
How to Make Bruschetta Dip

Step One: Mix the cherry tomatoes with the olive oil, sea salt, black pepper, and grated garlic and bake for 15-20 minutes.

Step Two: Press the cold boursin cheese into the bottom of a serving dish.

Step Three: Spoon the tomatoes and some juice over the top of the cheese, then top with fresh basil and balsamic glaze.

Step Four: Serve with crackers, crostini, or chips! Enjoy!
What to Serve With Bruschetta Dip
This dip is delicious with crackers, bagel chips or pita chips. I like it best with crostini. I made my own crostini, which is easy to do.
- Cut a baguette into slices and brush each side with melted butter.
- Sprinkle each side with garlic powder, onion powder, paprika and salt.
- Place them in the oven under the broiler until toasted on both sides.
Be sure and keep an eye on them as the broiler tends to toast very quickly!
It also works well as a spread for sandwiches or wraps. I even scrambled it into some eggs, and it was one of my favorite breakfasts in a long time!
Expert Tips
- I definitely recommend spooning the tomatoes on top of the cheese for the best texture. I tried mixing the tomatoes into the boursin cheese like I had seen in other recipes, but it made the mixture too soupy for my preference. My creation here is, so far, the only one I’ve seen where the roasted tomatoes go on top of the cheese!
- You can put as much or as little of the tomato juice on top as you’d like. I started with a little but ended up adding it all.
Recipe FAQs

You can roast the tomatoes up to one day in advance and store them in the refrigerator. When ready to serve, warm slightly, then assemble over the Boursin cheese. In my opinion, this dip is best when made and enjoyed fresh! Do not add the basil ahead of time, or it will brown on the edges.
If you can’t find Boursin, herbed goat cheese, whipped cream cheese, or ricotta mixed with garlic and herbs work well as substitutes.
Store leftovers in an airtight container in the refrigerator for up to 3 days. To serve the leftovers, reheat gently in the oven or enjoy at room temperature.

Ingredients
- 12 oz cherry tomatoes, halved
- 2 tablespoons olive oil
- ¾ teaspoon flakey sea salt
- ⅛ teaspoon black pepper
- 2 cloves garlic, grated
- 2 (5.3 oz) packages Boursin cheese
- 1 tablespoon balsamic glaze
- 3 tablespoons fresh sliced basil
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- In a medium oven-safe dish or pan, mix 12 oz cherry tomatoes with 2 tablespoons olive oil, ¾ teaspoon flakey sea salt, ⅛ teaspoon black pepper, and 2 cloves garlic.
- Put the pan in the oven and bake for 15-20 minutes, until the tomatoes blister and start releasing juices. Remove the tomatoes from the oven.
- Press 2 (5.3 oz) packages Boursin cheese into the bottom of a serving dish. Spoon the tomatoes and some juice over the top of the cheese, then top with 3 tablespoons fresh sliced basil and 1 tablespoon balsamic glaze.
- Serve with crackers, crostini, or chips! Enjoy!
