Bruschetta Dip

Bruschetta Dip is a super simple appetizer that is the perfect mix of rich and savory flavors. Whip it up in less than 30 minutes for your next celebration!

Ingredients

  • 12 oz cherry tomatoes, halved
  • 2 tablespoons olive oil
  • ¾ teaspoon flakey sea salt
  • teaspoon black pepper
  • 2 cloves garlic, grated
  • 2 (5.3 oz) packages Boursin cheese
  • 1 tablespoon balsamic glaze
  • 3 tablespoons fresh sliced basil

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a medium oven-safe dish or pan, mix 12 oz cherry tomatoes with 2 tablespoons olive oil, ¾ teaspoon flakey sea salt, ⅛ teaspoon black pepper, and 2 cloves garlic.
  • Put the pan in the oven and bake for 15-20 minutes, until the tomatoes blister and start releasing juices. Remove the tomatoes from the oven.
  • Press 2 (5.3 oz) packages Boursin cheese into the bottom of a serving dish. Spoon the tomatoes and some juice over the top of the cheese, then top with 3 tablespoons fresh sliced basil and 1 tablespoon balsamic glaze.
  • Serve with crackers, crostini, or chips! Enjoy!

  • Cherry tomatoes: You can use grape tomatoes if that’s all you have, but I prefer the sweetness of cherry tomatoes.
  • Garlic: The more garlic, the better! Fresh garlic will always have a punchier flavor. Try to stay away from jarred if you really want to elevate your dish.
  • Boursin cheese: I use two packages. I love the Garlic and Fine Herbs or Shallot and Chive flavors. If you’re not a fan of boursin you can whip together a little feta with cream cheese.
  • I definitely recommend spooning the tomatoes on top of the cheese for the best texture. I tried mixing the tomatoes into the boursin cheese like I had seen in other recipes, but it made the mixture too soupy for my preference. My creation here is, so far, the only one I’ve seen where the roasted tomatoes go on top of the cheese!  
  • You can put as much or as little of the tomato juice on top as you’d like. I started with a little but ended up adding it all.
