  2. Mayonnaise: For extra creaminess. You can use low-fat mayonnaise, but keep in mind that your dip will be a bit thinner.
  3. Shredded sharp cheddar cheese: You can shred your own or use packaged shredded cheese. Grating your own will make your dip a bit smoother and will help the cheddar cheese to melt more evenly into the dip because it doesn’t have anti-coagulation agents like the pre-shredded cheese.
  4. Bacon: For the best flavor, use real bacon. Make sure to drain off the excess bacon grease so that your dip doesn’t get too runny. If you’re trying to make this quickly, bacon bits work just fine!
  5. Captain Rodney’s Sweet and Spicy Pepper Glaze: I couldn’t find Captain Rodney’s in store here, so I ordered mine from Amazon. If you’d prefer, you can use any other off brand pepper jelly!

  2. 9×9 Baking Dish: You can also use an 8×8 baking dish or a small cast iron skillet for the best golden edges. To feed a crowd, double the recipe, bake in a 9×13 dish, and increase bake time by 5–8 minutes.

How to Make Captain Rodney’s Dip

You can definitely serve this dip cold! I feel like the texture and flavor is enhanced when it is baked, but some people prefer it cold and it’s perfectly safe to eat that way. Just be aware that the dip may be more difficult to scoop if served cold.

Ingredients

  • 1 8 oz block cream cheese, softened
  • ½ cup mayonnaise
  • 2 cups shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled or ⅓ cup bacon bits
  • ¼ cup green onions, chopped
  • ½ cup Captain Rodney’s Sweet and Spicy Pepper Glaze
  • ¼ cup Ritz cracker crumbs
  • crackers or crostini, for serving

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium bowl, use an electric hand mixer or stand mixer (with paddle attachment) to blend 1 8 oz block cream cheese, ½ cup mayonnaise, and 2 cups shredded sharp cheddar cheese until smooth.
  • Stir in about 4 slices of the crumbled bacon and 2 Tbsp green onions.
  • Spread the mixture evenly into a glass 9×9” pan and sprinkle with ¼ cup Ritz cracker crumbs.
  • Bake in the preheated oven for 20–25 minutes, or until bubbly and golden around the edges.
  • Remove from the oven and drizzle ½ cup Captain Rodney’s Sweet and Spicy Pepper Glaze evenly over the hot dip. The sprinkle the dip with the remaining bacon and green onions.
  • Serve warm with crackers, bread, or tortilla chips. Enjoy!
