Captain Rodney’s Dip

Ingredients

  • 1 8 oz block cream cheese, softened
  • ½ cup mayonnaise
  • 2 cups shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled or ⅓ cup bacon bits
  • ¼ cup green onions, chopped
  • ½ cup Captain Rodney’s Sweet and Spicy Pepper Glaze
  • ¼ cup Ritz cracker crumbs
  • crackers or crostini, for serving

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium bowl, use an electric hand mixer or stand mixer (with paddle attachment) to blend 1 8 oz block cream cheese, ½ cup mayonnaise, and 2 cups shredded sharp cheddar cheese until smooth.
  • Stir in about 4 slices of the crumbled bacon and 2 Tbsp green onions.
  • Spread the mixture evenly into a glass 9x9” pan and sprinkle with ¼ cup Ritz cracker crumbs.
  • Bake in the preheated oven for 20–25 minutes, or until bubbly and golden around the edges.
  • Remove from the oven and drizzle ½ cup Captain Rodney’s Sweet and Spicy Pepper Glaze evenly over the hot dip. The sprinkle the dip with the remaining bacon and green onions.
  • Serve warm with crackers, bread, or tortilla chips. Enjoy!

  • Block cream cheese: I don’t recommend using spreadable or whipped cream cheese as it will make your dip too thin.
  • Mayonnaise: You can use low-fat mayonnaise, but keep in mind that your dip will be a bit thinner.
  • Shredded sharp cheddar cheese: You can shred your own or use packaged shredded cheese. 
  • Bacon: For the best flavor, use real bacon. If you’re trying to make this quickly, bacon bits work just fine!
  • Captain Rodney’s Sweet and Spicy Pepper Glaze: I couldn’t find Captain Rodney’s in store here, so I ordered mine from Amazon. If you’d prefer, you can use any other off brand pepper jelly!
