Corn Fritos Dip

This Corn Fritos Dip is the perfect mix of sweet and savory with delicious flavors that are so addicting! Serve it at your next party or mix some up to enjoy as a snack or appetizer!

I’ve said it before and I will say it again, if you are throwing a party, a good dip is a must. Dips are perfect for big get-togethers. People can take as much or as little as they want, there’s always plenty to go around, and they are easily customizable to your taste or preference.

The same is true for this recipe for Corn Fritos Dip. This dip is savory with scallions, taco seasoning and crushed up Fritos, but it’s also sweet with red bell pepper and plenty of sweet corn.

It’s a delicious mix that’s easy to throw together and serve on a platter with tortilla chips or Fritos Scoops and it will have everyone coming by for more and more.

What’s great about dips is you don’t have to reserve them for parties. This dip is so easy to put together and saves well in the refrigerator. You can make it any time! We also love it as a side for sandwich lunches!

  3. Affordable: There are no expensive or hard to find ingredients in this recipe. Just a couple cans of corn and some peppers and you’ve got an appetizer or snack everyone will love.

Ingredients for Corn Fritos Dip

  1. Whole Kernel Corn: Using canned corn makes it super easy, but you could thaw frozen corn and drain it as well. 
  2. Red Bell Pepper: I like the sweetness and the color of red pepper but you could use yellow, orange or even add green peppers for even more veggies
  3. Red Onion: If you are sensitive to a strong red onion flavor, you can soak your onions in ice water for about 30 minutes to calm the bite. 
  4. Scallions: Scallions or green onions are great for a delicious fresh flavor and a pop of green on top.
  5. Mayonnaise: I prefer to use full fat Helman’s mayonnaise but you could use reduced fat or any brand you prefer. I would not recommend using Miracle Whip as it is a bit too sweet for this recipe. For a healthier option you could use some plain greek yogurt but I do not recommend replacing all the mayo with yogurt.
  6. Shredded Cheddar Cheese: You can use any cheese you prefer. I like cheddar but you can use shredded pepper jack or Colby Jack. I used finely shredded. 
  7. Seasonings: Onion powder, garlic powder and taco seasoning all provide excellent flavor to the mix. I like Fiesta Blend Mild Taco seasoning. 
  8. Crushed Chili Cheese Fritos: You can also plate this dip with Fritos Scoops for serving. 

How to Make This Recipe

Step One: Just Mix and Serve!

Mix all of the ingredients together in a bowl except for the Chili Cheese Fritos. Add the Fritos into the bowl right before serving so that they stay crunchy. 

Serve with Frito scoops. Enjoy! 

Expert Tips

  • Make sure your corn is drained well. This mixture can get very soupy if not drained properly.
  • Wait to add the crushed Fritos until just before serving to make sure they stay crunchy
  • Chill the dip. Chilling your dip gives the flavors time to melt together and will make your dip more creamy and thick

How to Serve Frito Corn Dip

This dip is served cold. I like to put it in a large bowl with a sprinkle of crushed Fritos on top for decoration. Surround it with Fritos, tortilla chips, doritos, pretzel bites or even fresh veggies for dipping. I also love it on a sandwich! 

How to Store this Corn Dip with Fritos

You can store any leftover dip in an airtight container in the refrigerator for up to five days. Give it a good mix before serving.

This dip does not freeze well, so it is best mixed up fresh each time!
