Peach Pizza with Goat Cheese, Prosciutto, and Honey

The perfect pizza for summer has arrived! I don’t know if I can accurately describe how delicious this Peach Pizza is.
Start with a super simple crust, top it with a subtly sweet sauce and mozzarella cheese and then layer on the flavor with tangy goat cheese, creamy mozzarella, juicy peaches and salty prosciutto. Add some fresh thyme and a balsamic glaze on top and you’ve got a dish that everyone will be talking about.
This pizza is a beautiful balance of texture and flavor! It’s the ideal choice for a light dinner, party appetizer (alongside some Brie Puff Pastry Bites or Stuffed Celery) or just an excuse to eat something that feels gourmet. Whatever the occasion, it is a dish you will not soon forget!
Ingredients to Make this Peach Pizza

- Frozen Pizza dough: You can make pizza dough from scratch but using frozen dough is a great shortcut! You could even use a pre-baked flatbread if you want. The frozen dough will have chewier crust, while a flatbread will be a bit crispier.
- Mozzarella: Melty, gooey and slightly salty. I originally did not have mozzarella in this recipe, but the pizza needed the luxurious texture that mozzarella adds. I recommend using fresh mozzarella and grating it yourself for the perfect meltiness. Pre-grated mozzarella cheese has anti-coagulation powder on it, which can lead to an uneven melt.

- Peaches: What really makes this dish taste and feel gourmet is the use of fresh peaches. If you don’t have fresh peaches on hand I would highly suggest saving this recipe for when you do! If you’re really craving it and just can’t wait for peach season, you can use canned peaches in a pinch. Drain and pat dry before adding to your pizza.
- Sliced prosciutto: You can leave this off if you want your dish to be vegetarian! I did test this recipe once without prosciutto, but it just felt like something was missing. The saltiness of the meat paired with the sweetness of the peaches really makes this recipe shine!
How to Make Balsamic Glaze

You can purchase pre-made balsamic glaze that is fantastic on everything from salads to ice cream but if you can’t find it at your local grocery store it’s easy (although possibly time consuming) to make your own.
You simply simmer some balsamic vinegar with some brown sugar, at a ratio of about 4:1. You could reduce the amount of sugar to your liking. Patience is key. Slowly simmer until it reaches the syrupy-consistency you desire.

This pizza is easy to customize to your liking and there are so many flavors that work well with the cheese and peaches. Try this pizza with:
- Bacon: In place of or in addition to the prosciutto
- Fresh Basil: In place of the thyme
- Caramelized Onions: As a new addition

Step One: Press the thawed pizza dough into a rectangle shape on the parchment paper.

Step Two: Brush the dough with the olive oil and 1 tablespoon of honey.

Step Three: Sprinkle the mozzarella cheese and goat cheese over the bread.

Step Four: Top the flatbread with the peach slices.

Step Five: Crumple the prosciutto and drop it on top of the flatbread.

Step Six: Bake until the dough is baked all the way through and the cheese is melted.

Step Seven: Top it with the fresh thyme. Then drizzle honey or balsamic glaze over the entire flatbread.

- Other stone fruits will work in this recipe if you want to try them out, specifically nectarines
- If you want a more traditional summer herb, basil would be a great substitution for thyme
Recipe FAQs

You do not need to remove the skin from the peaches before baking. When baked, you really won’t notice the skin.
BUT, if the thought of a little peach fuzz really bothers you, it’s easy to peel peaches quickly using a paring knife. Or you can boil some water, add the peaches to the water for 20-30 seconds, then quickly transfer the peaches to ice cold water for 30 seconds. This super quick change in temperature will make it easy to peel off the skin.
If you find that your dough is a bit soggy I would recommend slightly pre-baking the dough for a few minutes before adding your toppings next time. Baking on parchment paper or a preheated pizza stone also helps keep the crust crisp. The peaches can be juicy, so you might need to bake your pizza for a little bit longer than the dough packaging calls for.
This pizza is truly incredible when hot and fresh out of the oven, but you can prep some items ahead of time. You can prep the crust and add the peaches just before baking and serving.
You can reheat leftovers in the oven (for a nice, even bake), air fryer (to maximize crispiness) or in the microwave (for the fastest option).

Ingredients
- 16 oz Frozen Pizza dough, thawed
- 1 tbsp Olive oil
- 1 tbsp Honey
- 8 oz mozzarella, shredded
- 4 oz Goat cheese
- 1 Peach, ripe and sliced thinly
- 3 oz sliced prosciutto
- 2 tsp fresh thyme, or more to taste
- Balsamic Glaze, for topping
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Line a cookie sheet with parchment paper. Press the thawed pizza dough into a rectangle shape on the parchment paper, about ¼” thick (this will make a flatbread shape. You can also roll it into a circle if you’d prefer a traditional pizza shape).
- Brush the dough with the olive oil and 1 tablespoon of honey.
- Then sprinkle the mozzarella cheese over the bread, leaving a bit of uncovered dough around the edges for the crust.
- Use your hands to crumble the goat cheese on top of the mozzarella.
- Top the flatbread with the peach slices. Then use your hand to lightly crumple the prosciutto and drop it on top of the flatbread.
- Put the cookie sheet in the oven and bake for 20-25 minutes, or until the dough is baked all the way through and the cheese is melted.
- When the flatbread comes out of the oven, top it with the fresh thyme. Then drizzle the remaining honey or balsamic glaze over the entire flatbread.
