Buffalo Chicken Stuffed Celery

This Buffalo Chicken Stuffed Celery makes a super simple buffalo chicken dip with cream cheese, chicken, buffalo sauce, and cheese, and then spreads it into a celery stalk for an easy snack or treat!

For our final installation in our Stuffed Celery series, we are going for a classic combination in a new format…. Every game day party features a warm Buffalo Chicken Dip with a myriad of dippers, including chips, crackers, and veggies like celery. 

I wanted to take this classic combination, and turn it into something even easier to make!! Enter: Buffalo Chicken Stuffed Celery. 

This recipe makes an easy, 5 minute buffalo chicken dip (very similar to the filling in my Buffalo Chicken Pinwheels) and then spreads it into the hollow of celery stalks for a finger food that everyone will love! 

Make it yourself for a midday treat or take it to your game-day gathering for an appetizer to pass. Either way, it’s a snack that takes only a few minutes of your time and will leave you feeling grateful you spent those 5 minutes in the kitchen.

  1. Cream Cheese: Soften it to room temperature. I recommend whipped cream cheese because it is easy to mix and spread with a spoon (without needing extra tools!)Β 
  2. Cooked Chicken: I used rotisserie chicken but you can use leftovers as well.Β 
  3. Buffalo Sauce: Make your own or use buffalo wing sauce!Β 

How to Make this Recipe

Step 1: Combine the cream cheese, chicken, buffalo sauce, cheddar cheese and blue cheese. Mix to combine.Β

Step 2: Spread the mixture into the hollow part of the celery stalk. Top with chopped chives.Β

Buffalo Chicken Stuffed Celery

Ingredients

  • 20 oz bag celery stalks
  • 1 cup whipped cream cheese, softened to room temperature
  • 1 cup finely shredded cooked chicken
  • ΒΌ cup buffalo sauce
  • 3 Tbsp shredded cheddar
  • 2 Tbsp crumbled blue cheese
  • Chopped chives, for topping

Instructions

  • Wash the celery hearts and cut each stalk in half or thirds to be about 4-6 inches long.
  • In a small bowl, combine the softened cream cheese, shredded chicken, buffalo sauce, shredded cheddar, and blue cheese.
  • Use a knife to spread the mixture into the hollow part of the celery stalk. Sprinkle each stalk with chopped chives for extra topping. Enjoy!
