Peach Pizza

Ingredients

  • 16 oz Frozen Pizza dough, thawed
  • 1 tbsp Olive oil
  • 1 tbsp Honey
  • 8 oz mozzarella, shredded
  • 4 oz Goat cheese
  • 1 Peach, ripe and sliced thinly
  • 3 oz sliced prosciutto
  • 2 tsp fresh thyme, or more to taste
  • Balsamic Glaze, for topping

Instructions

  • Preheat the oven to 425 degrees Fahrenheit.
  • Line a cookie sheet with parchment paper. Press the thawed pizza dough into a rectangle shape on the parchment paper, about ¼” thick (this will make a flatbread shape. You can also roll it into a circle if you’d prefer a traditional pizza shape).
  • Brush the dough with the olive oil and 1 tablespoon of honey.
  • Then sprinkle the mozzarella cheese over the bread, leaving a bit of uncovered dough around the edges for the crust.
  • Use your hands to crumble the goat cheese on top of the mozzarella.
  • Top the flatbread with the peach slices. Then use your hand to lightly crumple the prosciutto and drop it on top of the flatbread.
  • Put the cookie sheet in the oven and bake for 20-25 minutes, or until the dough is baked all the way through and the cheese is melted.
  • When the flatbread comes out of the oven, top it with the fresh thyme. Then drizzle the remaining honey or balsamic glaze over the entire flatbread.
  • Slice and enjoy!

  • Frozen Pizza dough: You can make pizza dough from scratch but using frozen dough is a great shortcut! You could even use a pre-baked flatbread if you want.
  • Goat cheese: You can substitute with ricotta or just leave it off completely.
  • Peaches: If you’re really craving it and just can’t wait for peach season, you can use canned peaches in a pinch. Drain and pat dry before adding to your pizza.
  • Sliced prosciutto: You can leave this off if you want your dish to be vegetarian!
  • You can easily make small version of this for bite-sized appetizers by spreading the dough into mini muffin tins
  • Use flavored goat cheese if you want to experiment with the flavors.
  • You can grill the peaches on an outdoor barbecue grill if you have one available to you to add a hint of smoky flavor
  • Other stone fruits will work in this recipe if you want to try them out, specifically nectarines
  • If you want a more traditional summer herb, basil would be a great substitution for thyme.
