Preheat the oven to 425 degrees Fahrenheit.
Line a cookie sheet with parchment paper. Press the thawed pizza dough into a rectangle shape on the parchment paper, about ¼” thick (this will make a flatbread shape. You can also roll it into a circle if you’d prefer a traditional pizza shape).
Brush the dough with the olive oil and 1 tablespoon of honey.
Then sprinkle the mozzarella cheese over the bread, leaving a bit of uncovered dough around the edges for the crust.
Use your hands to crumble the goat cheese on top of the mozzarella.
Top the flatbread with the peach slices. Then use your hand to lightly crumple the prosciutto and drop it on top of the flatbread.
Put the cookie sheet in the oven and bake for 20-25 minutes, or until the dough is baked all the way through and the cheese is melted.
When the flatbread comes out of the oven, top it with the fresh thyme. Then drizzle the remaining honey or balsamic glaze over the entire flatbread.
