Brie Puff Pastry Bites

Crispy, sweet and creamy, Brie Puff Pastry Bites are the perfect appetizer for a gathering of any size. They are layered with flavor, simple to put together and sure to wow!

I love a good appetizer. And while no one can turn down a Cream Cheese Sausage Ball or Stuffed Celery, sometimes you need an appetizer that’s just a bit more elevated.

That’s where Brie comes in. Brie is a cheese that is just the right amount of fancy. Delicious, creamy and versatile, pairing well with just about any fruit and nut combo. Pile it all on top of a crispy puff pastry and you’ve got an appetizer that everyone will love.

I’ve seen many versions of puff pastry appetizers and while some are braided or cut into intricate designs, or feature a different cheese like my Goat Cheese Puff Pastry, this version of brie puff pastry bites makes it easy to enjoy the same incredible flavor in half the time.

Set these out alongside a cute charcuterie board and you’ll look like a master party planner!

  1. Brie cheese: You can feel free to leave the rind on. Place your cheese in the freezer for 15 minutes before you begin to make it easier to slice.
  2. Puff pastry: You can usually find puff pastry in the frozen section of the grocery store or if you’re feeling adventurous you can make your own! Make sure to thaw it in the fridge overnight before using it in this recipe.
  3. Raspberry jam: Just about any jam goes great on these bites. If you want to make your own, check out my article on how to make jam!  
  4. Chopped walnuts: You could also use pecans or pistachios.
  5. Fresh rosemary: You could use dried rosemary in a pinch but fresh is preferable
  6. Flaky sea salt

Variations

I’ve seen different jams and nuts on top of these little pastries, so feel free to experiment.

Try it with any of these variations:

  • Cranberry sauce
  • Fig jam
  • Apricot jam
  • Jalapeno jam
  • Pecans or pistachios instead of walnuts
  • Fresh thyme used instead of fresh rosemary

You can’t go wrong with just about any creamy cheese, sweet fruit and nut combo.

  1. Mini muffin tin: You can make these in a regular muffin tin, but the mini muffin tin makes for the perfect bite-sized pastries

How to Make this Recipe

Step 1: Lay out the puff pastry on a floured surface and roll it into a 10” x 14” rectangle. Cut it into 24 equal squares

Step 4: Top with fresh rosemary and a pinch of flaky sea salt

Step 5: Bake until the pastry turns golden brown. Enjoy!

Expert Tips

  • Don’t forget to spray your muffin tin before adding your puff pastry to it. Puff pastry will stick to the pan and make it difficult to get out!
  • Remove your puff pastry from the muffin tin after about 5 minutes of cooling. If you wait too long, your jam will thicken up, making them harder to remove.
  • Different brands of puff pastry come in different sizes. Most are about 9.75” by 10.5” but some can be 10” x 15”. I recommend buying a couple packages so you’re sure you have enough. You can always save the rest for other recipes like Sausage rolls.
  • Don’t overwork your puff pastry. If it begins to feel warm, put it in the refrigerator to sit for a bit. It won’t bake properly if it gets warm before going in the oven.

Do I Need to Cut the Rind Off the Brie Before Baking?

You do not need to worry about cutting the rind off of your brie before baking. The rind is relatively soft and will not be noticeable once the cheese is melted.

Where Can I Find Puff Pastry?

You can usually find puff pastry in the frozen section of your grocery store next to other frozen breads or rolls. I usually use the Pepperidge Farm brand.

Can I Make Brie Puff Pastry Bites Ahead of Time?

This appetizer is definitely the best when it’s fresh, but it is possible to make it ahead of time. You can make it ahead of time a couple of different ways. The first option is to assemble your pastries in the muffin tin and then cover them and place them in the refrigerator until you are ready to bake.

The second option is to fully bake your pastries and then reheat to serve. If you choose to go this route, I would recommend reheating in the oven or an air fryer, to get that crispy exterior. Microwaving the puff pastry will make it soggy.

Equipment

  • Mini Muffin Tin

Ingredients

  • 4 oz brie cheese
  • 1 sheet puff pastry
  • ¼ cup raspberry jam
  • ¼ cup chopped walnuts
  • 1 sprigs rosemary
  • Flaky sea salt

Instructions

  • Place the brie cheese in the freezer for 15 minutes. Preheat the oven to 375 degrees Fahrenheit.
  • Lay out the puff pastry on a floured surface and use a rolling pin to roll it into a 10”x14” rectangle. Then use a knife to cut it into four strips one way and 6 strips the opposite way, making 24 equal squares.
  • Remove the brie cheese from the freezer and cut it into 24 squares.
  • Spray a mini muffin tin with nonstick spray. Then place each square of puff pastry in a mini muffin tin, pressing it down slightly. Use a fork to poke the bottom of each puff pastry square 3 times.
  • Add a square of brie into each muffin tin. Then add ½ tsp of raspberry jam and ½ tsp of chopped walnuts.
  • Remove the leaves from the sprig of rosemary and chop the herb finely. Add a pinch of rosemary leaves and a pinch of flakey sea salt into each muffin tin.
  • Place the muffin tin on a cookie sheet and bake in the oven for 20-22 minutes.
  • Allow the brie cheese bites to cool slightly before serving. Serve and enjoy!
