These strawberry truffles are so easy to make and have the perfect burst of color and flavor, with no artificial dyes or crazy ingredients. In fact, you only need six simple ingredients to bring this treat together.
The secret ingredient to the perfect texture and flavor is freeze dried strawberries. I love using freeze dried strawberries for the best flavor and natural color in recipes like this one and my Strawberry Cream Cheese Frosting.

- Heavy Whipping Cream: You need the full fat of heavy whipping cream for this recipe. I do not suggest substituting anything else.

- Freeze Dried Strawberries: You need freeze-dried strawberries for this recipe. Fresh, frozen, or dried will not work as they are all too moist.
- Powdered Sugar: For rolling your truffles in at the end
Variations
This recipe is easily adapted to different tastes. You could substitute the white chocolate for milk or dark chocolate or substitute the strawberries for any other freeze-dried fruit you prefer. It would be delicious with raspberries or bananas.
I’ve also seen these truffles coated in milk chocolate or dark chocolate, but the powdered sugar is a much quicker option!

- Plastic Wrap: You need to place plastic wrap across the top of your dough as it cools so that it does not form a skin
How to Make this Recipe
Step 1: Blend your strawberries to create a powder
Step 2: Heat the butter and cream over medium heat until fully melted, then pour over the white chocolate chips. Stir until melted and smooth.
Step 3: Add the strawberry powder into the melted chocolate, and stir to combine. Cover with plastic wrap and let it cool.
Step 4: Once the mixture has cooled, scoop dough into small balls and roll in powdered sugar.
Expert Tips
- If you notice your butter starting to separate from your mixture once you add it to the white chocolate, keep stirring until it is fully combined. Be gentle!
- If your dough feels sticky when you try to roll it, try chilling it for longer. It should be solid enough to roll.

Recipe FAQs
These truffles will keep well in the refrigerator for up to a week. You could also freeze them in an airtight container for up to three months.
This recipe will not work well with fresh strawberries. Fresh strawberries have too much moisture and will result in a sticky, soggy truffle.
If your dough never seems to solidify, you may have added too much cream to your mixture. You can try adding a tablespoon or two more of melted white chocolate or even a teaspoon of cornstarch.
You could also try chilling your dough longer. It’s possible you followed directions perfectly but just forgot to give the dough enough time to set up! Be patient. You could also put the whole bowl into the freezer for 30 minutes.

Ingredients
- 1 cup white chocolate chips
- ¼ cup unsalted butter
- 3 tablespoons heavy whipping cream
- ¼ teaspoon vanilla extract
- ¼ cup freeze dried strawberries
- ¼ cup powdered sugar
Instructions
- Add the freeze dried strawberries to a small blender or food processor. Blend on high until the berries turn into a fine powder. Set aside.
- Add a small pot on the stove and turn to medium-high heat. Add the butter and stir until it melts.
- Add the heavy whipping cream and stir together with the butter. Bring the cream to a light simmer.
- Add the white chocolate chips into a medium mixing bowl and then pour the heavy cream mixture over the top of the chocolate chips. Allow the mixture to sit for 1-2 minutes until the chocolate is softened.
- Stir the melted chocolate chips until smooth, then add the freeze dried strawberry powder into the mixture and stir again until fully incorporated.
- Cover the mixture with plastic wrap and let it rest in the fridge for about 30 minutes until cooled down.
- Scoop the strawberry truffle dough into scoops about 1 ½ Tbsp and roll in your hands until a ball is formed. Roll the truffles in powdered sugar.
- Chill until served. Enjoy!
