Strawberry Truffles

Simple and delicious, these Strawberry Truffles are the perfect dessert for Valentine's Day! With just six ingredients and a few minutes, you’ll have a festive treat that looks as sweet as it tastes!

Equipment

  • Glass Bowl

Ingredients

  • 1 cup white chocolate chips
  • ¼ cup unsalted butter
  • 3 tablespoons heavy whipping cream
  • ¼ teaspoon vanilla extract
  • ¼ cup freeze dried strawberries
  • ¼ cup powdered sugar

Instructions

  • Add the freeze dried strawberries to a small blender or food processor. Blend on high until the berries turn into a fine powder. Set aside.
  • Add a small pot on the stove and turn to medium-high heat. Add the butter and stir until it melts.
  • Add the heavy whipping cream and stir together with the butter. Bring the cream to a light simmer.
  • Add the white chocolate chips into a medium mixing bowl and then pour the heavy cream mixture over the top of the chocolate chips. Allow the mixture to sit for 1-2 minutes until the chocolate is softened.
  • Stir the melted chocolate chips until smooth, then add the freeze dried strawberry powder into the mixture and stir again until fully incorporated.
  • Cover the mixture with plastic wrap and let it rest in the fridge for about 30 minutes until cooled down.
  • Scoop the strawberry truffle dough into scoops about 1 ½ Tbsp and roll in your hands until a ball is formed. Roll the truffles in powdered sugar.
  • Chill until served. Enjoy!

  • White Chocolate Chips: Choose high-quality chocolate chips for the best texture and flavor.
  • Unsalted Butter: You could substitute coconut oil if you do not want to use butter.
  • Heavy Whipping Cream: I do not suggest substituting anything else.
  • Freeze Dried Strawberries: Fresh, frozen, or dried will not work as they are all too moist.
  • If you notice your butter starting to separate from your mixture once you add it to the white chocolate, keep stirring until it is fully combined. Be gentle!
  • If your dough feels sticky when you try to roll it, try chilling it for longer. It should be solid enough to roll. 
  • If you find after chilling that your dough is too hard to scoop, try leaving it at room temperature for about 30 minutes and then try again. Be sure and chill your balls for a bit longer at the end to achieve the right consistency.
  • A lot of the flavor in this recipe comes from the white chocolate so don’t skimp on quality!
