Add the freeze dried strawberries to a small blender or food processor. Blend on high until the berries turn into a fine powder. Set aside.
Add a small pot on the stove and turn to medium-high heat. Add the butter and stir until it melts.
Add the heavy whipping cream and stir together with the butter. Bring the cream to a light simmer.
Add the white chocolate chips into a medium mixing bowl and then pour the heavy cream mixture over the top of the chocolate chips. Allow the mixture to sit for 1-2 minutes until the chocolate is softened.
Stir the melted chocolate chips until smooth, then add the freeze dried strawberry powder into the mixture and stir again until fully incorporated.
Cover the mixture with plastic wrap and let it rest in the fridge for about 30 minutes until cooled down.
Scoop the strawberry truffle dough into scoops about 1 ½ Tbsp and roll in your hands until a ball is formed. Roll the truffles in powdered sugar.
Chill until served. Enjoy!
