Today I bring you another delicious dessert dip, this Pecan Pie Dip, which is perfect for Thanksgiving or a Friendsgiving celebration. It has all the flavor of pecan pie, mixed with a creamy cream cheese layer for a hint of no-bake cheesecake (like this No Bake Lemon Cheesecake).  

It pairs perfectly with a wide variety of dippers so it’s sure to be something that anyone can enjoy! Ingredients for Cream Cheese Layer

  1. Cream Cheese: You can use reduced fat if you like, but I like the creaminess of regular. Make sure it is softened to room temperature to make mixing easier.
  2. Cool Whip: Use prepackaged cool whip or make your own whipped cream.
  3. Powdered Sugar: Powdered sugar helps keep your whipped cream stable and makes the whole layer fluffy

Ingredients for Pecan Pie Topping

  1. Pecans: You can use half or chop into small pieces. You can roast them lightly to bring out even more flavor.
  2. Brown Sugar: Light or Dark will work for this recipe. Dark gives a strong molasses flavor.
  3. Corn Syrup: Light corn syrup is the best for this recipe as the flavor isn’t too strong and overpowering
  4. Butter: For deliciously buttery flavor
  5. Vanilla: A splash of vanilla extract enhances all the sweet flavors
  6. Salt: Salt balances out the sweet

How to Make this Recipe

Step 1: Melt the Butter in a medium saucepan.

Step 2: Add the brown sugar and corn syrup

Caramel in saucepan and whole pecans added to the mix.

Step 3: Add the Pecans, vanilla and salt. Simmer for 3 minutes, then cool for 10 minutes.

  • Be careful not to add your pecan mixture on top while it is still hot. You want it to be warm enough to pour but not so hot that it melts your cream cheese

Can I Make This Ahead of Time?

This dip can be made ahead of time. Simply cover it, refrigerate and let it sit at room temperature for about 20 minutes before serving to give the layers a chance to soften. 

This dip should really be served at room temperature. Too warm and the bottom layer will melt, too cold and the dip will be too difficult to scoop.

Why is my Dip Chunky?

If you are having trouble getting the chunks out of your cream cheese layer, you probably didn’t give your cream cheese enough time to soften before you began mixing. Soft cream cheese will mix much more easily than cold cream cheese.

You can solve this issue with just some extra mixing. It will take a bit more effort to get it fluffy and creamy, but you should be able to whip it into place.

Does Pecan Pie Dip Contain Eggs?

Many recipes for Pecan Pie Dip do contain eggs, to give your top layer a little more custard-texture, but this recipe does not. I did not feel like it was necessary and leaving it out makes the preparation even easier!

Ingredients

Base Ingredients

  • 8 oz cream cheese, softened
  • 4 oz Cool Whip
  • 1 cup Powdered Sugar

Topping Ingredients

  • 1 cup Pecans
  • ½ cup Brown Sugar
  • cup Corn Syrup
  • 2 Tbsp Butter
  • 1 tsp Vanilla
  • ½ tsp Salt

Dipping Ingredients

  • Apple slices, cookies, graham crackers, etc for dipping

Instructions

  • Melt the butter in a small pot, then add the brown sugar and corn syrup. Mix to combine.
  • Then add the pecans, vanilla, and salt into the pot and allow them to lightly simmer for 3 minutes. Rest for 10 minutes to allow the mixture to cool.
  • Use an electric hand mixer to mix the cream cheese and powdered sugar together until combined. Fold in the cool whip by hand. Spread this mixture on the bottom of a serving dish.
  • Once the topping has cooled until it is just warm (not hot or cold), pour the filling on top of the cream cheese mixture. Enjoy with apple slices, cookies, graham crackers, etc.
