Sausage Cheese Dip

Ingredients

  • 1 lb ground sausage, either hot or mild depending on your preference
  • 1 (8 oz) block cream cheese
  • 4 oz velveeta
  • 1 (15 oz) can fire roasted diced tomatoes , not drained
  • 2 tsp complete seasoning
  • 1 ¾ cups mozzarella, divided

Instructions

  • In a large skillet on the stove, cook 1 lb ground sausage for a few minutes until cooked through and crumbly.
  • In the pan, add the 1 (8 oz) block cream cheese, 4 oz velveeta, and 2 tsp complete seasoning, and stir until the cheese is melty.
  • Add 1 (15 oz) can fire roasted diced tomatoes and mix again until well blended.
  • Remove the pan from the heat and stir in 1 cup of mozzarella cheese.
  • Spray an oven-safe dish with nonstick spray, then transfer the dip into the dish. Top with the remaining ¾ mozzarella cheese and place under the broiler for 3-4 minutes, until the top is melty and crispy.
  • Serve with crackers, crostini, etc. Enjoy!

  • Ground sausage: You can use hot or mild, depending on your preference. I used hot.
  • Cream cheese: You can use reduced fat if you prefer. Full fat will be a bit creamier.
  • Fire Roasted Diced Tomatoes: If you can’t find fire roasted you could substitute some diced tomatoes with green chilies for a slightly southwestern flavor. Use mini tomatoes if you prefer smaller chunks in your dip.
  • Complete seasoning: Complete seasoning is a pre-packaged seasoning mix of garlic, cumin, coriander, parsley and oregano. You can buy a jar or make your own complete seasoning.
  • Mozzarella: For best results, grate your own rather than buying it pre-shredded.
  • Don’t drain the tomatoes. The juice keeps the dip perfectly creamy and scoopable.
  • Hot sausage adds amazing flavor if you like a little kick, but mild sausage works great for family-friendly versions. Choose what works best for you!
  • Always watch carefully when you broil your dip. Different broilers come to different temperatures and you want your cheese bubbly, not burnt.
  • You can keep this dip warm and ready for hours by setting it in a slow cooker. Do not add the cheese to the top, set the slow cooker to warm and stir occasionally to prevent separating.
