Lucky Charms Rice Krispie Treats

Equipment

  • 9x9" Baking Dish

Ingredients

  • 4 cups Rice Krispies cereal
  • 2 cups Lucky Charms cereal with marshmallows removed
  • 5 tablespoons unsalted butter
  • 10 ounce bag mini marshmallows
  • ½ teaspoon vanilla extract
  • ¼ cup sweetened condensed milk
  • 1 ½ cups Lucky Charms dehydrated Marshmallows
  • ½ teaspoon salt

Instructions

  • Fill a large bowl with the Rice Krispies cereal and the Lucky Charms Cereal (but not the lucky charms marshmallows). Set aside.
  • Spray a 9x9 baking dish with nonstick spray. Set aside.
  • In a large pot add the unsalted butter. Stir the butter continuously over low heat for about 10 minutes until the foam subsides, the milk solids gain a brown color, and the butter begins to smell nutty. You have now browned your butter! If you want a faster recipe, you can skip the browning step and simply melt the butter and move on to step 4 right away.
  • Add the 10 ounce bag of marshmallows to the pot and continuously stir until they completely melt.
  • Add in the vanilla extract and sweetened condensed milk, stirring everything once again until combined.
  • Remove the marshmallow mixture from the heat and pour over the bowl filled with the cereals. Use a large wooden spoon or rubber spatula to fold the ingredients together until evenly distributed.
  • While the mixture is still warm, add the Lucky Charms marshmallows and fold the two together again.
  • Transfer the mixture to the prepared baking dish and press into the pan evenly. Let the treats sit at room temperature for at least an hour before eating.
  • Cut and enjoy or store in a ziploc bag or a tightly sealed container for later. Enjoy!

Notes

  • Lucky Charms Cereal: You will need to separate the cereal from the marshmallows. Do NOT pour the hot marshmallow mixture into the cereal bowl with the Lucky Charms marshmallows still mixed into the cereal. Your lucky Charms marshmallows will melt and will mess up the look of your treat! 
  • Mini Marshmallows: Use fresh marshmallows as they will melt better. You can also use jumbo marshmallows if preferred.
  • Butter: This recipe calls for browning the butter to add an extra hit of flavor to your Rice Krispie treats, but feel free to omit this step if you don’t want to take the time to brown your butter. In that case, simply melt the butter, then add the marshmallows. 
  • Sweetened Condensed Milk: This is not a standard ingredient in Rice Krispie Treats, but I love the flavor it gives! I highly recommend it.
  • Vanilla Extract: This adds just a touch of sweetness. Feel free to sub out any other fun extracts you want, including cake batter flavor or mint.
  • Lucky Charms Marshmallows: I picked the marshmallows out of the cereal box, but they also sell bags of JUST the Lucky Charms marshmallows!
  • Make sure to spray your hands or spoon with nonstick spray before trying to press your Lucky Charms Rice Krispie treats into the pan. This will keep the mess from sticking all over your fingers! 
  • Make sure to cook your marshmallow mixture on low heat. HIgh heat could lead to a burnt marshmallow mixture! 
  • Set aside some extra Lucky Charms marshmallows that you can press into the top of the treats after you have put them in the pan. This will add some extra decoration to the top. 
  • Make sure not to cook your marshmallow mixture on the stove for too long. Too long of a cook time will lead to chewy treats! 
  • Work quickly! The closer your treats get to room temperature, the harder they are to press into the pan. Don’t let them come to room temperature!
