Carrot Chocolate Covered Strawberries

Festive and delicious, these Carrot Chocolate Covered Strawberries are a cute addition to your Easter celebration. Enjoy them on their own or use them to decorate a cake or dessert!

Ingredients

  • 1 cup white chocolate chips
  • 1 Tbsp vegetable oil, or coconut oil
  • Red and Yellow Food Coloring
  • 10 Strawberries, washed and dry
  • 1 cup chocolate sprinkles, for plating

Instructions

  • Line a cookie sheet with wax paper. Set aside.
  • Place the white chocolate chips in a microwave-safe bowl and add the vegetable oil into the bowl.
  • Microwave on high for 30 seconds. Remove the bowl, stir, then microwave again for another 30 seconds. Repeat this in 30 second increments until the white chocolate chips are totally melted (it usually takes me 3 rounds).
  • Put equal drops of red and yellow food coloring into the white chocolate chips and stir, adding more coloring until your desired orange color is achieved.
  • Grab the strawberries lightly by the green portion and dip each strawberry in the melted chocolate. After dipping, allow each strawberry to drip any excess chocolate off and then place the strawberries on the wax paper.
  • Pour the extra white chocolate into a small sandwich-size ziploc bag, then use scissors to cut off a teeny corner of the bag. Drizzle the melted chocolate over the coated strawberries to make the signature carrot lines.
  • Place the tray in the fridge and allow the strawberries to chill for 10 minutes.
  • Pour the chocolate sprinkles into a shallow bowl, then nestle the chocolate-covered strawberries amongst the sprinkles to look like carrots in dirt.
  • Serve and enjoy!

  • White Chocolate Chips: You could substitute with orange candy melts
  • Vegetable Oil or Coconut Oil: This helps to thin out the white chocolate chips a bit for a smoother finish
  • Red and Yellow Food Coloring: Mix to make the perfect orange food coloring
  • Strawberries: Make sure they are fresh strawberries, washed and completely dry. Look for large, firm juicy strawberries
  • Chocolate Sprinkles: These are optional but give your carrots the appearance of being plucked from the ground
  • Make sure you use dry strawberries before you begin or you may get frustrated trying to make the chocolate stick!
  • Keep a hot pad under your bowl while you dip your strawberries to keep your melted candy soft and smooth.
  • If you often run into the problem of your white chocolate getting too hot and becoming stiff and unusable, try reducing your microwave’s power by about 50%. It may take longer to melt, but it is better than getting too hot, too fast.
  • If you have a double boiler, you can absolutely use the double boiler method to melt your chocolate and keep it melted while you dip.
